Updated: Apr 26

Macadamia Nut Cookies are one of my favorite cookies! Sweet, Crunchy and Buttery these cookies are perfect for the holiday or anytime of the year.

Ingredients

1 cup Almond Flour

1 tablespoon Coconut Flour

2 tablespoons Monk Fruit Sweetener

1/2 tsp Baking Powder

1/4 cup Butter

1 tsp Vanilla Extract

1/4 cup Macadamia Nuts (chopped)

3 tablespoons Sugar Free White Chocolate Chips (I used Lily's brand)

Pinch of Salt

Instructions

Preheat the oven to 350 degrees and line a baking sheet with parchment paper, set aside.

In a large bowl using a electric hand mixer on low speed blend the almond flour, coconut flour, monk fruit sweetener, salt and baking powder together. Add the remaining ingredients to the bowl and mix, on medium speed, until well combined.

Make a mound with about 2 tablespoons of the cookie dough and place on the prepared baking sheet, flatten to about 1/4 inches. Repeat this process with the remaining cookie dough.

Bake for 10-12 minutes or until golden brown. Remove the cookies from the oven and allow to cool completely and get crunchy. Enjoy.
