Low Carb Soft Pretzels


These Soft Pretzels are a awesome keto low carb treat! Serve these up at your next Game Day party with some mustard as a side or our Cheese Sauce recipe below. You and your guest will love them!


Ingredients


1 pkg. Rapid Rise Yeast (1/4 ounce pack)


1/4 cup Warm Water


1/2 tsp Monk Fruit Sweetener


2-1/2 cups shredded Mozzarella Cheese


6 ounces Cream Cheese


2 large Eggs (plus 1 for Egg wash)


2 cups Almond Flour


1/2 cup Coconut Flour


1 tablespoon Baking Powder


1/4 tsp Salt


1/4 tsp Xanthan Gum


Course Himalayan Salt (to top Pretzels)


Instructions


Preheat oven to 400 degrees. Line two baking sheets with parchment paper, set aside.


In a small cup add the warm water, monk fruit sweetener and yeast, stir and set aside to proof and activate.


In a large heat proof bowl add the mozzarella cheese and cream cheese and microwave for 1 minute, remove the bowl stir the cheese, place back into the microwave for another 30 seconds remove and stir until well combined and creamy. Add the 2 eggs to the bowl and mix until well combined.


In a separate large bowl mix together the almond flour, coconut flour, 1/4 tsp salt, xanthan gum and baking powder until well combine and no lumps are present.


Add to the cheese bowl alternatively yeast liquid and dry ingredients a little at a time stirring in between after added until all the yeast and dry ingredients are completely incorporated into the cheese mixture and a dough is formed.


Divide the dough into 8 pieces, roll each piece one at a time into a 17 inch long ropes (use extra coconut flour if on the counter if dough is sticking). Take the ends of the dough in each of your hands and cross the ends of the dough over one another to make a pretzel shape then place on the baking sheet. Repeat this process and place 4 pretzel on each sheet so they can have room to bake.


Beat the 1 Egg in a small bowl and brush the tops of the pretzels with the egg, top each pretzel with the course salt, to taste, then bake for about 20-25 minutes or until golden brown. Remove the pretzels from the oven and allow to cool a bit. Enjoy with our cheese sauce or your favorite condiment.


Cheese Sauce


Ingredients


2 cups Sharp Cheddar Cheese


8 ounces Cream Cheese


1/4 cup Heavy Whipping Cream


1 tablespoon Hot Sauce (optional for spicy cheese sauce)


Instructions


In a medium microwavable bowl add all the ingredients and heat for 1 minute, remove and stir together. Place bowl back into the microwave and heat for 30 seconds more, stir and repeat this heat/stirring process until the sauce becomes creamy. You can adjust the heavy whipping cream more or less depending upon how thick or thin you want your sauce.
