Low Carb Slice Bread


When I first started living a low carb lifestyle it was so hard to give up my buttered toast or sandwiches. So I had to create a recipe that would satisfy my cravings and also fit into my keto meals. This recipe is from our Rosa's Keto Treats Baking Mix line. It's one of our favorite bread recipes that customers truly loved.


Ingredients


1 tablespoons Fast Acting Yeast


1 cup Warm Water


1 tsp Monk Fruit Sweetener


2/3 cup Flaxseed Meal


1/2 cup Oat Fiber


1 cup Vital Wheat Gluten


1/4 cup Monk Fruit Sweetener


1 tsp Salt


3 tablespoon Butter (melted)


6 large Egg


Instructions


Mix in a cup the water, yeast and 1 tsp of monk fruit sweetener and allow to proof and get bubbly for about 5 minutes.


Combine the yeasted water and remaining ingredients in a stand or electric hand mixer and mix for 5-10 minutes to build up the gluten for a proper rise in your dough.


If you do not have a mixer you can mix the ingredients in a bowl until well combined and knead the dough by hand for 15-20 minutes, using additional flour to prevent the dough from sticking to the counter.


Shape the dough into a log and place in an oiled loaf pan and cover with plastic wrap. Allow the dough to rise for 3-4 hours in a warm location.


Preheat oven to 350 degrees. Once the dough has risen and doubled in size remove the plastic wrap and bake for 40-60 minutes until fully cooked and deep golden brown. Remove from the oven and allow to cool completely before slicing.
