Low Carb Saltine Crackers


These buttery slightly sweetened saltine crackers are so tasty! Perfect as a snack with cheese, meat or jam. Try them with our Easy Chili recipe here on the website for a delicious complete meal.


Ingredients


2 cups Almond Flour


1 Tablespoon Monk Fruit Sweetener


1/2 tsp Baking Powder


1/2 tsp Salt


1 Large Egg


1 Tablespoon Butter (melted)


1/2 tsp Butter Extract


Instructions


Preheat oven to 350 degrees. In a large bowl whisk all of the dry ingredients together until completely combined and no lumps are in the flour. Add the remaining cracker ingredients and mix together until it form a dough.


Place the dough on a large piece of parchment paper then cover with an additional piece of parchment paper. With a rolling pin roll the dough into a very thin rectangle. Remove the top parchment paper. With a pizza cutter or a knife cut the dough into cracker shaped squares then poke holes in each cracker shaped dough.


Leave the dough shaped crackers on the parchment paper and slide it onto a large baking sheet. Bake for 8 minutes, flip the crackers over and adjust them on the baking sheet. Place the crackers back into the oven to continue baking for about 6-8 minutes or until the crackers are light golden brown.


Remove the crackers from the oven and place on a cooling rack until completely cooled. Enjoy!

Makes about 50 Crackers


Note: If you don't have this they will still taste good, but for that delicious buttery Ritz cracker like flavor I highly recommend. I buy mine at Walmart or Smith's grocery store.


Be sure to roll as thin as a cracker so they will come out crispy.
