Low Carb Peanut Butter Waffles


My husband is an absolute nut for peanut butter, pun intended LOL. So when I make these Peanut Butter Waffles he is a happy hubby. They are so easy to make with a few ingredients, but packed with flavor! And a bonus is that they are flourless!


Ingredients


¼ cup Peanut Butter


1 tablespoon Butter


2 tablespoons Cream Cheese


2 tablespoons Heavy Whipping Cream


2 large Eggs


½ tsp Baking Powder


10-15 drop Liquid Monk Fruit or Stevia (optional for a sweet waffle)


Instructions


Heat a waffle iron as manufactures directions.


In a microwave safe bowl place the peanut butter, butter and cream cheese and heat in the microwave for 30 seconds, remove and whisk until smooth. Stir in the heavy whipping cream, baking powder, eggs and sweetener until well combined.


Pour some of the waffle batter in the waffle iron and cook until crispy. Remove waffles and repeat. Enjoy!
