Low Carb Clover Rolls


Clover Rolls are a delicious bread to have with your holiday dinners. They are buttery, soft and oh so tasty. I like to enjoy these the following day for breakfast with jam and a cup of coffee.


Ingredients


1 pkg. Rapid Rising Yeast (about ¼ ounces)


1 tsp Monk Fruit Sweetener (or sweetener of choice)


¼ cup Warm Water


2 cups Almond Flour


½ cup Coconut Flour


1/3 cup Parmesan Cheese (the dry kind in the shaker like Kraft)


1 Tablespoon Baking Powder


¼ tsp Salt


2 ½ cups Mozzarella Cheese (shredded)


8 ounces Cream Cheese


2 Large Eggs


½ cup Butter (melted)


Instructions


Preheat oven to 400 degrees and spray a 12 cup muffin pan with non-stick cooking spray. In a small cup mix together the warm water, yeast and sweetener allowing it to proof and get a bit bubbly; set aside.


In a large bowl whisk together the almond flour, coconut flour, parmesan cheese, baking powder, salt until well combined, set aside. In a microwave safe bowl add the mozzarella cheese and cream cheese and place in the microwave and cook for 1 minute, stir, and then place back in the microwave for an additional 30 seconds at a time until the cheese is melt. Remove and stir until well blended.


Add the eggs to the cheese mixture and stir until smooth, then add the flour mixture and stir until dough is formed. Separate the dough into 12 even pieces and form 3 balls from each of them and add 3 of the balls into a muffin tin space. Continue this method with the remaining dough filling all 12 muffin spaces with 3 dough balls.


Bake for 10-12 minutes or until golden brown and cooked through. Remove from the oven and brush the tops of each clover roll with melted butter. Enjoy.
