Low Carb Bread


This easy to make bread is perfect toasted for your favorite sandwiches. I like making open face sandwiches like peanut butter and jelly and avocado, bacon and egg open face sandwiches.


Ingredients


2 cups Almond Flour


1/2 cup Coconut Flour


6 large Eggs beaten


3 tablespoons Coconut Oil melted


1/2 cup Butter softened


3 tsp Baking Powder


1/2 tsp Salt


1 pkg. Yeast Granules


1/4 cup Warm Water


3 tsp Monk Fruit Sweetener


Instructions


Preheat the oven at 350 degrees. Spray a loaf pan with non-stick cooking oil.


In a small measuring cup add the warm water, sugar and yeast, stir and set aside.


In a large bowl combine the almond flour, coconut flour, baking powder, and salt whisking until all lumps from the flour are gone. To the flour bowl add the beaten eggs, yeast mixture, butter and coconut oil and blend well.


Pour the bread batter into the prepared loaf pan and spread the top evenly. Bake for 30-40 minutes until the bread is brown and knife or toothpick comes out clean. Remove the bread from the oven and allow to cool completely for about an hour or longer so that the bread sets up. Take the bread out of the loaf pan, slice and enjoy!
