Lentil Shepherd's Pie


Yum Yum Lentil Shepards Pie! This dish is so delicious even my non vegan family members will eat it. Hearty and full of flavor, take this dish to a pot luck and watch it disappear.


Ingredients:

2 cups cooked green lentils

1 cup diced onion

1 cup diced carrot

1 cup diced celery

2 cloves garlic, minced

2 tbsp tomato paste

1 tsp dried thyme

1 tsp dried rosemary

1 cup mashed sweet potato

1 tbsp olive oil

Salt and pepper to taste


Instructions:

Preheat the oven to 375°F (190°C).


In a pan, sauté the onion, carrot, and celery in olive oil until tender.

Add the garlic and sauté for another minute.


Add the cooked lentils, tomato paste, thyme, and rosemary. Stir to combine.


Transfer the mixture to a baking dish and top with mashed sweet potato.

Bake for 20-25 minutes or until heated through and the sweet potato is lightly browned.
