Lentil Quinoa Meatballs

Satisfy your cravings with our flavorful lentil quinoa meatballs recipe. Packed with protein and nutrients, these meatless meatballs are a must-try!


Ingredients

1-1/2 cups cooked Lentils (green or brown)

1 cup cooked Quinoa

1/2 cup Onion finely chopped

3 cloves Garlic minced

3 Tablespoons Nutritional Yeast

1-1/2 Tablespoons Italian Seasoning

1-1/2 Tablespoons of Tomato Paste

1/4 cup Almond Flour

1/2 tsp Salt to taste

Black Pepper to taste


Instructions

Preheat oven to 375 F degrees (190 C) and line a baking sheet with parchment paper, set aside.


In a food processor add all the ingredients and pulse a few time to form somewhat of a clumpy dough, but not mushy. (DO NOT OVER MIX)! Place the dough in a ball and stir a bit to make sure all the ingredients are well incorporated and you can form meatballs.


Take one tablespoon of the dough and roll in your hands to make a round meatball shape and place on the prepared baking sheet. Repeat this process with the remaining dough.


Bake the meatballs for 35-40 minutes until they are firm. Remove and serve with your favorite sauce, pasta or rice.

I made these tonight for dinner but goofed up and used dry measurements of the lentils and quinoa whoops! No matter, I ended up with 8 meals worth of delicious vegan Italian meatballs! 😋 Great tasting recipe! 💖
