Lemon Herb Marinade

A bright and aromatic marinade that brings out the natural flavors in tofu with fresh lemon juice and zest, complemented by a blend of herbs like parsley, thyme, and rosemary. This light, citrusy profile is refreshing yet flavorful, adding a delightful hint of zest and herbal fragrance to any tofu dish.




Ingredients

1/4 cup Olive Oil

1/4 cup Lemon Juice

2 Tablespoons Fresh Parsley, chopped

1 Tablespoon Fresh Thyme, chopped

1 Tablespoon Fresh Rosemary, chopped

2 Cloves Garlic, minced

Salt and Pepper to taste


Instructions

Combine all ingredients in a bowl and mix well.

Marinate the tofu for at least 1 hour to allow the flavors to penetrate.

Lemon Herb Grilled Tofu and Veggie Skewers

Ingredients

1 Block Tofu, pressed, cubed, and marinated in lemon herb marinade

1 Zucchini, sliced into rounds

1 Red Bell Pepper, cubed

1 Red Onion, cubed

8-10 Cherry Tomatoes

Fresh Parsley, for garnish

Salt and Pepper, to taste

Lemon Wedges, for serving


Instructions

Thread the marinated tofu, zucchini, red bell pepper, red onion, and cherry tomatoes onto skewers.


Preheat a grill or grill pan over medium heat. Place the skewers on the grill and cook for 5-7 minutes on each side, until the tofu and vegetables are lightly charred and heated through. Brush with any remaining marinade as they cook for added flavor.


Sprinkle with fresh parsley, season with a pinch of salt and pepper, and serve with lemon wedges for extra zest.
