Khichri is a dish that goes back centuries and is just about the greatest Indian comfort food ever invented! It’s a nourishing porridge-like dish filled with tons of flavor and spice.
Ingredients
3 tablespoons cumin seeds
1 tablespoon black mustard seeds
1 tablespoon yellow mustard seeds
1 tablespoon Nigella seeds
coconut oil for frying
30 grams garlic
150 grams onion, finely chopped
1 small piece of turmeric, finely chopped
1 small piece of ginger, finely chopped
1 long red chili, finely chopped
1 bunch coriander, roots and stem only, chopped roughly
2 tablespoons ground cumin
3 tablespoons curry powder
3 sprigs of curry leaves
1 tablespoon salt
1 tablespoon pepper
300 grams barley
500 grams yellow lentils
Instruction
Add the seeds to the pot over medium heat.
Dry fry the seeds until they pop.
Add the oil, garlic, onion, turmeric, ginger, coriander roots and stem, curry leaves, salt, and pepper and sauté for 5 minutes.
Mix in the rest of the ingredients and turn to a simmer.
Cook for 45-55 minutes, stirring as you go.
Allow to rest and then serve with chopped tomato, coriander and leftover sour cream form the nacho recipe.
