Have this crunchy granola with your favorite milk, topped on yogurt or as a yummy snack. This is a great keto cereal that you and your family can enjoy.
Ingredients
3 cups Slivered Almonds
1-1/2 cups Chopped Walnuts
1/2 cup Cashews
1/4 cup Coconut Flour
1/2 cup granulated Monk Fruit Sweetener
1 tsp Psyllium Husk Powder (can be omitted)
3 tsp Cinnamon Powder
1/2 tsp Salt
1 tsp Baking Powder
3 large Egg Whites beaten
1/2 cup Butter melted
2 tsp Vanilla Extract
2 tsp Liquid Stevia
Instructions
Preheat the oven to 350 degrees. Place a piece of parchment paper on a large baking sheet and set aside.
In a large bowl mix coconut flour, all the nuts, cinnamon powder, baking powder, erythritol and salt until well combined. Add the remaining ingredients to the bowl and stir until everything is completely coated.
Pour the granola onto the prepared baking sheet and spread it out to completely cover your pan (about 1/4-1/2 inch thick), but not too thin so you can have some chunky granola pieces when done.
Bake for 20-25 minutes then remove from oven. Using a spatula turn the granola over, so the other side can get brown and break up into pieces. Return the granola back to the oven.
Continue cooking for 10-15 minutes longer until the granola gets golden brown. Keep and eye on it so it doesn’t get too dark or burn.
Remove the granola from the oven and allow to cool completely. The granola will get crunchier as it cools. Enjoy.
