Iced Matcha Cookies

I really enjoy trying new recipes outside of the box so these Matcha Cookies are right up my alley. Make these cookies for Christmas by using a tree or wreath cookie cutter for the holiday. They have a delightful flavor and perfect with a cup of hot coffee, tea or a glass of cold almond milk.


Ingredients


2 cup Almond Flour


1 tablespoon Coconut Flour


2 teaspoons Matcha Powder


1/2 cup Butter


1/4 cup Monk Fruit Sweetener powdered


pinch Salt


Instructions


Mix the butter, and sweetener and matcha powder together until it becomes creamy


and well combined. Stir in the almond flour and salt and mix well. Wrap the dough in a piece of plastic wrap, flatten for easy rolling later. Put the dough in the fridge for an hour or freezer for 30 minutes to set up for easy rolling, overnight works best.


Once dough is firm preheat the oven at 350 degrees. Line two baking sheets with parchment paper.


Remove the dough from the fridge place on a piece of parchment paper and cover with an additional piece of parchment paper. Roll the dough 1/4 inch thick and cut out shapes with a cookie cutter. Place the cutouts onto the prepared baking sheets.


Bake for 8-10 minute or until the cookies get firm and set up, but NOT brown. Remove the cookies from the oven and keep on the baking sheet to continue cooking and allow them to set up. Remove from baking sheet to continue cooling. Frost cookies and place in the fridge so the icing can get stiffed up. Once set enjoy.


Frosting


1 cup Powdered Monk Fruit Sweetener


2-3 tablespoon Heavy Whipping cream (use enough for a icing consistency)


1 tsp Vanilla Extract


Instructions


Mix all the ingredients in a bowl until well combined then ice your cookies.

Makes 16 Cookies


Notes: You can use 1/2 - 1 tablespoon for a stronger Matcha taste. I like a strong Matcha taste so this is how I make my cookies. Play with the recipe and add as much Matcha that you enjoy.


You can adjust the liquid and powdered monk fruit to get the consistency you like if your piping the icing to decorate or icing the full cookie.


You can also melt sugar free White Chocolate Chips and drizzle on the cookies.
