Homemade Cocoa Crunch Cereal

If you miss those Cocoa Crunchy cereals from your youth then you are in for a treat with this tasty cereal recipe. Filled with so much chocolatey flavor and crunch it will definitely satisfy your chocolate craving! This cereal is low carb sugar and gluten free.


Ingredients


Cocoa Crunch Cereal Dough


1 ½ cups Coconut Flour


2 tablespoons Psyllium Husk Powder


½ cup Golden Flax Seed Meal


¼ cup Cocoa Powder


1 tsp Baking Powder


½ tsp Salt


¾ cup Walden Farms Chocolate Syrup


½ cup Butter melted


2 tablespoons Coconut Oil melted


2 tsp Vanilla Extract


½ cup Water as needed (add little at a time)


Cocoa Sugar Coating


3 tablespoons Powdered Monk Fruit Sweetener or sweetener of choice


2 tablespoons Cocoa Powder


Instructions


Preheat oven to 350 degrees. In a large bowl combine the coconut flour, cocoa powder, psyllium husk powder, flax seed meal, salt and baking powder whisking well removing all clumps.


In a small separate bowl whisk together the syrup, vanilla and water then pour it and the butter into the coconut flour mixture and stir to combine.


Take half of the dough and place the mixture onto a piece of parchment paper and cover it with another piece of parchment paper. Roll out the dough until you get the thickness of cereal you desire. Remove the top parchment paper. With a pizza cutter slice to make squares out of the dough. Repeat this process on another baking sheet with the other half of the dough.


Slide the parchment paper with the cereal onto a baking sheet.


Bake for 15 minutes, remove the pan from the over and turn the cereal over to crisp up the other side, separating each piece. Cook for 10 more minutes and repeat the process 5 minutes at a time until the cereal is cook through and crunchy. Remove cereal from the oven and allow cooling. Place cereal in a large bowl.


Mix together the 2 TB Powdered Monk Fruit Sweetener and 3 TB Cocoa Powder in a small bowl and pour over the cereal. Toss until the cereal is completely covered; store in an airtight container.


You may have to add a bit more water to the dough if it is too dry, because some coconut flours absorb more than others. Add a tablespoon at a time to get a soft stiff dough consistency.


8 Servings (1/2 cup)


Notes:


You can sub out the Walden Farms syrup for your favorite sugar free syrup or sweetener.
