Elevate your sandwiches with this High Protein Sandwich Spread, featuring chickpeas, pumpkin seeds, scallions, garlic, and nori. Ingredients
2 cans Chickpeas (drained and rinsed)
1/4 cup Raw Pumpkin Seeds
2 large Scallions (chopped)
2 cloves Garlic (minced)
1 Nori Sheet (shredded)
1/2 tsp Rosa's All Purpose Seasoning, to taste (recipe on this website)
1/4 cup Original or Spicy Bitchin' Sauce (or your favorite creamy dressing or mayo)
Sour Dough Bread, Gluten Free Bread (bread of choice (toasted)
Topping Options: shredded lettuce, sprouts, tomato, onions, avocado
Instructions
In a food processor pulse the chickpeas, pumpkin seeds, garlic and scallions together until you get a slightly chunky creamy texture.
Put the mixture in a bowl and stir in the shredded nori, rosa's all purpose seasoning, Bitchin Sauce or your favorite dressing until well combined.
Spread some of the mixture on a slice of toasted bread, add your toppings and place another piece of toasted bread on top. Slice in half and serve. Repeat this process with the remaining spread or store in an airtight container for later use.

You can increase your protein if you use a bread that contains a good gram of protein like Dave's Bread or Ezekiel Sprouted Bread.
Note: if you don't have a food processor you mash the chickpeas with a fork.
