Grilled Shrimp Skewers w/Pineapple Salsa


With just a few ingredients, these sweet and spicy grilled shrimp are perfect for entertaining or fancy dinner for the family. We know you'll really enjoy these tasty shrimp with a side of basmati rice. :)


Ingredients:

1 lb. large shrimp, peeled and deveined

2 tbsp. olive oil

1 tsp. garlic powder

1 tsp. paprika

Salt and pepper to taste

1 pineapple, diced

1 red onion, diced

1 red bell pepper, diced

1 jalapeno, seeded and minced

1 lime, juiced

Chopped cilantro, for serving


Directions:

Preheat grill to medium-high heat.


In a bowl, mix together olive oil, garlic powder, paprika, salt, and pepper to make the shrimp marinade.


Add peeled and deveined shrimp to the marinade and toss to coat.

Thread shrimp onto skewers.

Grill shrimp skewers for 2-3 minutes per side or until cooked through.


In another bowl, mix together diced pineapple, diced red onion, diced red bell pepper, seeded and minced jalapeno, lime juice, and salt to make the salsa.


Serve grilled shrimp skewers with pineapple salsa on top and chopped cilantro on top.
