Glazed Tofu Ham

This Glazed Tofu Ham is a savory and slightly sweet plant-based centerpiece, perfect for holidays or any special meal. The tofu is marinated with a smoky and tangy blend of soy sauce, maple syrup, Dijon mustard, and spices, giving it a rich and satisfying flavor. The baked tofu develops a golden, caramelized glaze that adds a touch of sweetness and a gorgeous finish. With its tender texture and delicious crust, this tofu ham is versatile—serve it sliced as a main dish, use it in sandwiches, or pair it with your favorite sides for a comforting meal.




Ingredients

1 Block of Super Firm or Extra-Firm Tofu (pressed for at least 20 minutes)

2 Tablespoons Soy Sauce or Tamari (for gluten-free)

1 Tablespoon Maple Syrup

1 Tablespoon Dijon Mustard

1 Tablespoon Apple Cider Vinegar

1 tsp Smoked Paprika

1/2 tsp Garlic Powder

1/2 tsp Onion Powder

1/4 tsp Ground Cloves (optional, for a holiday flavor)

1 Tablespoon Olive Oil (for the glaze)

1 Tablespoon Brown Sugar or Coconut Sugar (for the glaze)

1-2 tsp Water (enough to make the glaze)


Instructions

Slice the pressed tofu into a slab about 1 inch thick or shape it into a rounded "ham" shape, if preferred. Use a sharp knife to score the surface lightly in a crisscross pattern, being careful not to cut all the way through.


In a small bowl, mix the soy sauce, maple syrup, Dijon mustard, apple cider vinegar, smoked paprika, garlic powder, onion powder, and ground cloves.


Place the tofu in a shallow dish or a resealable bag. Pour the marinade over it, ensuring all sides are coated. Let it sit for at least 6 hours or over night is best flavor.


In a small bowl, mix the olive oil, brown sugar and water to make the glaze, set aside.


Preheat your oven to 375°F (190°C). Line a baking dish with parchment paper or lightly grease it.


Place the marinated tofu in the prepared baking dish and pour the marinade on top getting it into the crisscross pattern and bake for 30 minutes.


After 30 minutes, brush the tofu generously with the glaze mixture. Return it to the oven and bake for an additional 15-20 minutes, brushing with glaze halfway through, until it becomes golden and caramelized.


Let the tofu ham cool slightly before slicing. Serve as a centerpiece dish or use in sandwiches or salads.


Tip: For a more meatier texture freeze your tofu for 24 hours or longer, unthaw then press and drain the liquid before using.
