2 cups Brown Rice
4 cups Vegetable Broth
4 Tablespoons Olive Oil (or oil from the sun dried tomatoes)
6-8 Cloves Garlic, minced
4 cups Fresh Spinach (chopped)
3/4 cup Sun Dried Tomatoes, chopped
2 tsp Fresh Rosemary, chopped
2 tsp Fresh Thyme, chopped
Salt and Pepper to taste
Vegan Grated Parmesan Cheese (optional for serving)
Instructions
In a medium pot, bring vegetable broth or water to a boil. Add the brown rice, reduce heat to low, cover, and simmer for about 40-45 minutes, or until the rice is tender and the liquid is absorbed. Fluff with a fork.
In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant. Add the chopped sundried tomatoes, fresh spinach, rosemary, and thyme. Cook until the spinach is wilted.
Add the cooked brown rice to the skillet and mix well. Season with salt and pepper to taste.
Serve warm, topped with grated parmesan cheese or vegan cheese optional.
