Ingredients
2 Pounds Yukon Gold or Russet Potatoes, peeled and cut into chunks
4 Cloves Garlic, peeled
1/2 cup Unsweetened Plant Milk (such as almond, soy, or oat)
1/4 cup Vegan Butter
Salt and Pepper, to taste
Fresh Parsley or Chives, for garnish (optional)
Instructions
In a large pot, add the potato chunks and garlic cloves. Cover with water and add a pinch of salt.
Bring to a boil over high heat, then reduce the heat to medium and simmer until the potatoes are tender, about 15-20 minutes.
Once the potatoes and garlic are tender, drain them well and return them to the pot.
Add the vegan butter to the potatoes and garlic. Begin mashing using a potato masher or a fork.
Gradually pour in the plant milk while continuing to mash until you reach your desired creaminess.
Season with salt and pepper to taste. Adjust the consistency with more plant milk if needed.
Transfer the mashed potatoes to a serving bowl and garnish with fresh parsley or chives, if desired. Serve warm.
