Fig Jam

This is a delicious Fig Jam that you can have on toast, ice cream, crackers, scones or anything you desire. It's sweet sticky and delicious!



Ingredients

1 Pound Dried Figs (chopped and stems removed)

1 cup Organic Sugar

1 cup Water

2 Tablespoons fresh Lemon Juice

1 tsp Lemon Zest


Instructions

Place all the ingredients in a sauce pan on the stove top and cook on medium/high heat until it comes to a boil. Reduce the heat and allow to simmer for 40 minutes stirring occasionally.


Once the figs have broken-down and softened mash them with a fork while in the pot. Allow to cook another 5 minutes.


Using a spoon take a small amount of jam and place it on a plate and allow to cool. Once it cools check to see if the jam holds together and is not liquidy. If it holds and is jam like then your jam is ready. If not allow to cook for another 5-10 minutes.


Once your jam is ready, allow it to cool then pour it into an airtight glass jar.


You can store the jam on the shelf or in the fridge to last longer.
