Fathead Low Carb Pizza


I absolutely LOVE pizza! Maybe because I was born and raised in New York and there seemed to be a pizza shop on almost every corner. These were no mere shops, but each had their own unique deliciousness which made me appreciate pizza so much as a kid and into my adulthood. Which is why I was so happy that I didn't have to give up my favorite food on my low carb diet. This fathead dough based pizza is so easy to make but has so much flavor and I think you'll love it as much a I do.


Ingredients


1-3/4 cups Mozzarella Cheese shredded


1 cup Almond Flour


2 tablespoons Cream Cheese


1 large Egg


1 tsp Baking Powder


1 tsp Oregano or Italian Seasoning


pinch Salt


topping of choice (ideals: pepperoni, mushrooms, onion, sausage, bacon, ham, onions, etc).


Instructions


Preheat oven at 425 degrees.


Put mozzarella and cream cheese in a medium microwave safe bowl and microwave for 1 min, stir and then microwave another 30 seconds, repeating this process in 30 second increments until fully melted.


Stir in a little of the almond flour to temper the heat of the cheese, then beat in the egg until smooth. Add the baking powder, oregano, salt and the rest of the almond flour until well combined.


Place a piece of parchment paper on the counter and add a little almond flour on it. Put the dough on the parchment paper and form and flatten the dough into a round pizza shape. You can also use a rolling pin, just cover the dough with another piece of parchment paper and roll to thickness you’d like. Using a fork, poke a few holes in the dough to avoid the dough from forming any air pockets.


While on the parchment paper slide the pizza dough onto a baking tray or pizza stone, and bake for 12-15 minutes, or until golden brown. Add desired pizza toppings and continue cooking until they are heated through, about 10-12 more minutes. Remove from oven and enjoy.

Makes 8 Slices (nutritional value may differ depending on the toppings added).


Note: This dough can also be cooked in an Air Fryer using a flat air fryer cake pan. Half way through the baking time just flip the crust over to get crisp on both sides. Then add your topping as usual.
