Easy Peach Cobbler

If you love Peach Cobbler then you will absolutely love this upscale classy version! It's perfectly sweetened, bursting with peachy flavor and OH SO DELICIOUS! If you want to impress your guest with a super easy dessert that looks like you've been in the kitchen baking all day, this is it! Bonus, its totally Vegan friendly.


Ingredients


6 large Peaches


1/4 cup Coconut Sugar


1/4 cup Brown Rice Syrup


2 Tablespoons Vegan Butter


1/4 tsp Cinnamon


1 Tablespoon Cornstarch


pinch of Salt


1 sheet of store bought Puff Pastry


Peach Filling Instructions


Peel the peaches and cut into bite size pieces. Place a medium saucepan on the stovetop burner and add the peaches, coconut sugar, brown rice syrup, butter, cinnamon and salt into the pan.


Simmer on medium heat until the peach mixture comes to a slight boil for about 15 minute. Lower the heat and allow the peaches to cook until they are soft but can hold their shape. Quickly mix in the cornstarch and simmer on low heat for another 8-10 minutes allowing the filling to thicken. Remove the pan from the burner, pour the filling into a bowl and allow to cool.


Puff Pastry Instructions


Line a baking sheet with parchment paper, set aside. Heat oven to 400 degrees or according to the Puff Pastry container instructions. Take one sheet of the pastry from the box, while folded remove the paper from the inside. While the pastry is still folded cut into three, unfold each piece and cut/separate each into three pieces, you should have nine squares when done. Place the nine pastry dough squares onto the prepared baking sheet and bake for 15-20 minutes or until dough puffs up and is golden brown. Remove the pastry from the oven.


Place one of the cooked Puff Pastry squares onto a plate, top with peach filling and dust with powdered sugar for a pretty presentation. Enjoy!
