I love Pancakes and especially with berries on top! So this recipe is one of my favorites because its quick and easy to make with no fuss. A perfect breakfast for a busy day.
Ingredients
2/3 cup Almond Flour
1/3 cup Coconut Flour
2 tsp Baking Powder
2 tablespoons Monk Fruit Sweetener
3 large Eggs
2 tablespoons Butter melted
4 ounces Cream Cheese softened
1/3 cup Almond Milk
¼ cup Heavy Whipping Cream
5-10 drops Liquid Stevia (optional for sweeter)
½ cup Berries of choice
Instructions
Preheat oven to 350 degrees and butter a 7x11 sheet pan.
Place all the ingredients, except the berries, in a blender and mix for one minute until smooth.
Pour the pancake mix evenly into the sheet pan and top with berries.
Bake for 30-35 minutes until set and golden brown. Remove from oven; allow to sit and set for about 2 minutes, cut and serve.
