Ingredients

1 lb. (450g) Mushrooms (white button, cremini, or baby bella)

1 cup Plant-Based Milk (unsweetened almond, soy, or oat)

1 Tablespoon Apple Cider Vinegar or Lemon Juice

1 cup Panko Breadcrumbs

1/2 cup Chickpea Flour or All-Purpose Flour

1 teaspoon Garlic Powder

1 teaspoon Onion Powder

1 teaspoon Smoked Paprika

1/2 teaspoon Black Pepper

1/2 teaspoon Salt

Olive Oil Spray or a small amount of olive oil

Instructions

Clean the mushrooms with a damp cloth and trim the stems if necessary.

If the mushrooms are large, cut them into bite-sized pieces.

In a bowl, mix the plant-based milk with the apple cider vinegar or lemon juice. Let it sit for a few minutes to curdle slightly and create a vegan buttermilk.

In a separate bowl, combine the panko breadcrumbs, garlic powder, onion powder, smoked paprika, black pepper, and salt.

Place the flour in a shallow dish.

Dip each mushroom piece into the flour, coating it evenly.

Then dip the floured mushroom into the vegan buttermilk, allowing any excess to drip off.

Finally, coat the mushroom with the seasoned panko breadcrumbs, pressing gently to adhere.

Preheat your air fryer to 375°F (190°C) for about 3-5 minutes.

Lightly spray the air fryer basket with olive oil or brush it with a small amount of oil to prevent sticking.

Arrange the breaded mushrooms in a single layer in the air fryer basket, making sure they are not overcrowded. You may need to cook them in batches.

Lightly spray or brush the tops of the mushrooms with a bit of olive oil for extra crispiness.

Air fry the mushrooms at 375°F (190°C) for 10-12 minutes, shaking the basket halfway through, until they are golden brown and crispy.

Remove the mushrooms from the air fryer and let them cool slightly before serving.

Serve with your favorite dipping sauce, such as vegan ranch, aioli, or a spicy mayo.

Note: For an even meatier texture you can use portobello mushrooms, cut out the gill inner black part, slice into strips then follow the remaining instructions.
