Creamy Artichoke Dip (Vegan)

This Creamy Vegan Artichoke Dip is a rich, cheesy dish perfect for a cozy dinner or as a flavorful side. Tender artichokes are combined with sweet cherry tomatoes, sautéed onions, and a velvety cashew cream sauce, then baked to perfection with melted vegan manchego and cheddar cheeses. Packed with plant-based goodness and bursting with savory flavors, this casserole is comfort food at its finest. It’s dairy-free, gluten-free, and filled with wholesome ingredients, making it a delicious and nutritious option for everyone to enjoy!




Ingredients

1 can of Artichokes (14 oz), drained, squeeze liquid out and chopped

2 cups Baby Spinach, chopped

1/2 cup Vegan Manchego Cheese, shredded

1/2 cup Vegan Cheddar Cheese, shredded

1/2 cup Soaked Cashews

1/2 cup Cashew Milk

1/2 cup Cherry Tomatoes, halved

1/2 Red Onion, finely chopped

2 Tablespoon Olive Oil (for sautéing)

2 Cloves Garlic, minced

1/2 tsp Onion Powder

1/2 tsp Italian Seasoning

Salt and Pepper to taste

2 Tablespoons Nutritional Yeast (optional for extra cheesy flavor)


Instructions

Preheat your oven to 375°F (190°C).


In a blender, combine the soaked cashews, cashew milk, garlic powder, nutritional yeast using and a pinch of salt. Blend until smooth and creamy. Set aside.


Heat 2 tbsp of olive oil in a skillet over medium heat. Add the chopped red onion and minced garlic, cooking for about 4-5 minutes until softened and fragrant.


In a large mixing bowl, combine the chopped artichokes, cherry tomatoes, sautéed onions and spinach, vegan manchego, and cheddar cheese.


Mix in the cashew cream sauce over the mixture, and season with Italian seasoning, onion powder, salt, and pepper to taste.


Add nutritional yeast if you want a bit more cheesy flavor.


Lightly grease an 8x8-inch (or similar-sized) baking dish. Transfer the artichoke mixture into the dish and spread it out evenly.


Sprinkle a little more shredded vegan cheese on top, and bake for 20-25 minutes until bubbly and slightly golden on top.


Let the casserole cool for a few minutes before serving. It pairs well with crusty bread, a side salad, as a dip or as a main dish.
