Indulge in the perfect blend of crunchy almonds, sweet honey, and wholesome oats with this easy homemade granola recipe. Enjoy this tasty treat on top of our Easy 3 Minute Yogurt for a complete high protein breakfast or snack.
Ingredients
2 cups Rolled Oats
1 cup Sliced Almonds
1/4 cup Honey
2 Tablespoons Coconut Oil
1 tsp Vanilla Extract
Pinch of Salt
Optional: Dried Fruit (e.g., raisins, cranberries, apricots) add after baking
Instructions
Preheat the oven to 300 F degrees (150 C) and line a baking sheet with parchment paper.
In a large mixing bowl, combine rolled oats and sliced almonds. In a small saucepan heat the honey, coconut oil, vanilla extract and a pinch of salt over low heat until everything is melted and well combined.
Pour the honey mixture over the dry ingredients and mix until the oats and almonds are evenly coated. Spread the mixture evenly onto the prepared baking sheet.
Bake for 25-30 minutes or until the granola turns golden brown, stirring halfway through for even baking.
Remove the granola from the oven. Allow the granola to cool completely on the baking sheet. If desired mix in the dried fruit after baking.
Once cooled, store the granola in an airtight container for up to two weeks.
Note: this recipe is very versatile as you can trade out almonds for any nut, honey for maple syrup or agave nectar and add various dried fruits after baking.
