Ingredients
1/4 cup Olive oil
Juice of 2 Limes
1/4 cup Fresh Cilantro, chopped
2 Cloves Garlic, minced
1 tsp Cumin
Salt and Pepper to taste
Instructions

Marinate tofu for at least 30 minutes, or up to 4 hours for more flavor.

Cilantro Lime Tofu Tacos
Ingredients
1 Block Tofu, pressed, cubed, and marinated in cilantro lime marinade
1 Tablespoon Olive Oil
6-8 Small Corn or Flour Tortillas
1/2 cup Shredded Red Cabbage
1/2 cup Diced Tomatoes
1/4 cup Chopped Fresh Cilantro
1/4 cup Sliced Green Onions
Lime Wedges, for serving
Optional toppings: Avocado slices, Vegan Sour Cream, or Salsa
Instructions
In a skillet, heat olive oil over medium heat. Add the marinated tofu and cook until golden brown on all sides, about 5-7 minutes. Set aside.
Warm the tortillas in a dry skillet or microwave. Place a few pieces of tofu on each tortilla, then top with shredded cabbage, diced tomatoes, chopped cilantro, and green onions.
Garnish with a squeeze of lime and any optional toppings, such as avocado, vegan sour cream, or salsa.
