Chili Lime Stuffed Peppers


Stuffed Peppers are one of my favorite recipes to make. Peppers are so healthy filled with Vitamin C and so many nutrients, so whenever I get a chance I add them to my meals. This recipe is so easy to make but full of flavor and so filling.


Ingredients


3 whole Red Bell Peppers


4 uncooked Trader Joe’s Chili Lime Chicken Patties


1/2 cup Cilantro Salsa


1 cup Cheddar Cheese shredded


1/4 cup Onions chopped


2 tablespoons olive oil


Salt and Pepper to taste


Cooking Spray I use Coconut Cooking Spray


Instructions


Preheat oven to 350 degrees. Line a baking sheet with foil or parchment paper for easy clean up, set aside.


In a pan sauté onions in the olive oil until translucent. Take each uncooked chicken patty and crumble it up into the pan with the onions, cook until completely done. Stir in salsa. Remove from heat and let cool. Once completely cooled stir in the cheddar cheese, set aside.


Wash the peppers, cut at a diagonal (the long way) and remove seeds and white part inside. Coat the bell peppers inside and out with a little coconut cooking spray or olive oil and salt and pepper.


Stuff each bell pepper with the chicken mixture and place on the prepared baking sheet. Put 1/4 cup of water in the pan, then over the stuffed peppers with aluminum foil.


Bake for 20 minutes covered with the foil, after 20 minutes has past remove foil and bake for another 10-15 minutes. Remove baking sheet and top each bell pepper with some additional cheese and place under the ovens broiler until the cheese melts. Remove from oven and enjoy.
