Chickpea and Avocado Salad


This Chickpea and Avocado Salad is super filling yet feels light and savory. Serve this as a side or eat as a main meal, it's a unique and delicious salad you can enjoy.



Ingredients:

1/2 can chickpeas, drained and rinsed

1/2 avocado, diced

1/2 cup cherry tomatoes, halved

1/4 cup diced red onion

2 cups mixed greens

1 tbsp olive oil

1 tbsp balsamic vinegar

Salt and pepper to taste

optional: add cubes of your favorite plant based cheese


Instructions:

In a bowl, combine the chickpeas, avocado, cherry tomatoes, red onion, mixed greens, olive oil, balsamic vinegar, salt, and pepper.


Note: You can take vegan sour cream, small amount of almond milk (enough to the thin out the sour cream), chives, onion powder and pinch of salt and pepper. Mix well and drizzle onto the salad.
