Cheese-Its Crackers (Low Carb)


These crackers taste like the Cheese-It that we use to love snacking on before starting the Keto lifestyle except they are low carb and much healthier, which makes me happy LOL! I make these for my grandkids and they love them! It's a healthy alternative for you and your family to enjoy.


Ingredients


1-1/2 cup Almond Flour


1/4 cup Cheese Powder


1 cup Sharp Cheddar Cheese shredded


1/2 cup Parmesan cheese fresh shredded


1/4 tsp Salt


1/2 tablespoon Baking Powder


1/4 tsp Onion Powder


dash of Garlic Powder


1/4 cup Butter softened


1-2 tablespoons Water (as needed to make a dough)


Instructions


Preheat oven to 330 degrees.


In a large bowl mix together the almond flour, cheese powder, salt, onion powder, baking powder, garlic powder and shredded cheeses.


Mix in the butter and 1 tablespoon of water to make a dough. Add the second tablespoon of water if dough is too dry, only if needed. Be sure to mix it well.


Place the dough on a large piece of parchment paper (big enough to put on a large baking sheet) and cover the dough with another piece of parchment paper. With a rolling pin, roll out the dough to make a thin layer (about 1/4 in.), remove the top parchment paper and cut square shapes in the dough (using a pizza cutter or sharp knife) and poke a hole in the

center of each square.


Slide the crackers that are on the parchment paper onto a large baking sheet. Bake for 8-10 minutes, remove from the oven and separate the crackers and turn them over.


Put the crackers back in the oven and allow to cook for an additional 8-10 minutes or until the crackers crisp up and get a little golden color.


Remove the crackers from the oven and allow to cool completely as they will get crunchier as they sit. Dust with additional cheese powder, Enjoy!
