Egg Bites are one of those simple breakfast foods that are oh so tasty. I first saw them at Starbucks and now I see them at Costco and grocery stores all around my town. This recipe is an easy version of those tasty bites that you can alter and make it your own.
Ingredients
8 large Eggs
1/2 cup Half & Half
1/2 tsp Salt
1/2 tsp each Onion and Garlic Powder
1/4 tsp Black Pepper
Dash of Nutmeg
4 cups Organic Raw Baby Spinach (cooked and chopped)
1/2 cup Sharp Cheddar Cheese (or cheese of choice)
1 cup cooked Breakfast Sausage
Instructions
Preheat oven to 350 degrees. Place a silicone muffin pan on a large baking sheet and spray the muffin tin with non stick cooking oil.
Evenly distribute the sausage, cheese and spinach into each section of the muffin pan.
In a large bowl beat the eggs, half and half, salt, nutmeg, black pepper, garlic powder and onion powder together until well combined. Pour the egg mixture evenly into each section of the muffin pan covering the veggie meat and cheese.
Bake for 20-22 minutes or until eggs are set and are not loose in the center. Remove from the oven and enjoy.

Note: this is a base recipe and you can change the fillings. Some ideas would be red bell peppers, bacon, onions, or any veggie or leftover meat you may have in the fridge.
I use Trader Joe's Coconut Oil Spray to oil the silicone muffin pan as a healthier oil option.
