Ingredients
2 cups Raw Cashews (soaked 4 hours or overnight)
1/4 tsp Salt (adjust to taste)
1-2 Tablespoons Oil (optional, for creaminess)
Sweetener (optional, like Maple Syrup or Honey, to taste)
Water (for soaking)
Instructions
Place the raw cashews in a bowl and cover them with water. Let them soak for 4-6 hours or overnight. This softens the cashews and makes them easier to blend.
After soaking, drain and rinse the cashews under cold water to remove any residue.
Place the soaked cashews in a food processor or high-speed blender.
Blend on high speed for about 5-10 minutes, stopping to scrape down the sides as needed. The cashews will first turn into a crumbly mixture, then start to clump together, and finally become creamy.
Once the cashew butter reaches your desired consistency, add the salt and oil (if using). Blend again until smooth and creamy. Adjust salt and sweetness to taste.
Transfer the cashew butter to a clean jar or airtight container. It can be stored in the refrigerator for up to a month.
