Ingredients:
4 salmon fillets
2 tbsp. olive oil
1 tbsp. Cajun seasoning
Salt and pepper to taste
1 avocado, diced
1 tomato, diced
1/4 cup diced red onion
1 lime, juiced
Chopped cilantro, for serving
Instructions
Preheat oven to 400°F.
In a small bowl, mix together olive oil, Cajun seasoning, salt, and pepper to make the salmon rub.
Rub salmon fillets with the seasoning mixture.
Heat a large skillet over medium-high heat.
Add salmon fillets to the skillet and cook for 1-2 minutes per side or until blackened.
Transfer salmon fillets to a baking sheet and bake in preheated oven for 8-10 minutes or until cooked through.
In another bowl, mix together diced avocado, diced tomato, diced red onion, lime juice, and salt to make the avocado salsa.
Serve blackened salmon fillets with avocado salsa on top and chopped cilantro on top.
