This nutrient packed breakfast option is sure to keep you and your whole family nourished and begging for more. For all you chocolate lovers out there you can swap the blueberries out for chocolate chips or another type of fruit if blueberries aren’t your cup of tea.
Ingredients 2 cups whole buckwheat groats
1 teaspoon vanilla powder 2 teaspoons baking powder
pinch of salt 1 egg or 1 Flax Egg 1/4 cup coconut oil 1 teaspoon vanilla 1 cup frozen blueberries
1-2 tablespoons maple syrup
2 cups water
Instructions
Add the buckwheat groats to a high-speed blender. Blend till it turns into flour. Transfer to a bowl along with the remaining dry ingredients. Stir well and set aside.
Whisk the egg, coconut oil, maple syrup, and water in a separate bowl. Add the wet ingredients to the dry and mix well to form a batter.
Fold in the frozen blueberries. Add vanilla.
Heat up a pan on medium heat and add a splash of coconut oil. Spoon in your pancake batter.
Cook until the surface is pitted with small holes and has begun to set. Carefully lift up the pancakes with a spatula, and flip them over.
Cook for no more then a minute. Remove and serve with chopped bananas and a good splash of maple syrup.
