Broccoli Cheddar Biscuits

Updated: Dec 29, 2023

Here's a tasty and easy to make biscuit recipe that you and your family will enjoy. I created this low carb recipe for my kids (and hubby) who refuse to eat broccoli no matter how much cheese I smother it with lol. These biscuits are so good that they go back for seconds.

Ingredients

2-1/2 cups Almond Flour

1 cup Cheddar Cheese

1 cup Broccoli cooked and finely chopped

1 tablespoon Baking Powder

2 large Eggs beaten

1/4 cup Butter softened

1/2 tsp Garlic Powder

1 tsp Onion Powder

1/2 tsp Black Pepper

1/2 tsp Salt to taste

Instructions

Preheat oven 325 degrees and line a baking sheet with parchment paper.

In a large bowl place the almond flour, baking powder, garlic powder, salt, onion powder, and black pepper, stir making sure to get out the clumps. Mix in the cheddar cheese and broccoli.

Add in the eggs and stir. Then gently mix in the butter, but do not over mix so the biscuits do not get tough when baking. Using a ice cream scoop or large spoon, scoop out 10 mounds and place them on the prepared cookie sheet, flatten slightly.

Bake for 18-22 minutes keeping an eye on them so not to burn. Cook until golden brown. Let cool at least 5 minutes so they don’t fall apart. Enjoy with some Butter!
