Breakfast Bruschetta


This amazing fusion of bruschetta and avocado toast for breakfast is absolutely delicious! Enjoy this topped with a poached egg and you've got yourself a complete and healthy meal.


Ingredients 1 Egg (room temperature, fresh as fresh can be; the chicken laying this egg was raised eating grass and grubs not grain) 8 Cherry Tomatoes, cut into halves 1/4 cup Basil, finely sliced Splash of olive oil 1/2 Avocado, mashed in a bowl with salt and pepper (set aside) 1 slice of Essene Bread or any Sprouted Bread

1 tablespoon Pumpkin Seeds Salt, to taste Pepper, to taste


Instructions

Fill a large pan with water and bring it to the boil. crack the egg into a small bowl and set aside.Turn off the heat (no further boiling, no vinegar, no swirling).

Place the egg into the water and let it cook. If it is fresh, it will hold together... If it is not, find a new supplier of eggs.

When your egg is cooked to your liking, scoop it out with a slotted spoon, and drain on a paper towel.

Combine the tomatoes, basil, and a splash of olive oil in a bowl. season well with salt and pepper and mix.

Scoop the mashed avocado and the tomato mixture and place it on a slice of bread. top with the poached egg.

Sprinkle with the pumpkin seeds and some lovely cracked pepper... And enjoy!
