Indulge in the ultimate treat with this easy vegan chocolate cake recipe. It's rich, decadent and absolutely delicious! My friends and family love this cake and they can not tell that it's vegan at all. It has proven to be The Best Vegan Chocolate Cake I have every made!
Ingredients
1-1/2 cup All Purpose Flour ( or Gluten Free Flour)
1 cup Sugar
1/3 cup Cacao or Cocoa Powder (sifted)
1 tsp Baking Powder
1/2 tsp Baking Soda
1/4 tsp Salt
1 tsp Vanilla Extract
1/2 cup Coconut Oil (softened)
1 cup Plant Based Milk (I used unsweetened Almond Milk)
1 cup Chocolate Ganache Frosting (recipe below)
Instructions
Preheat oven to 350 F degrees (175 C) and line the bottom of a cake pan with parchment paper.
In a large bowl mix the dry ingredients until well combined. Add the wet ingredients and mix until you get a smooth batter.
Pour the batter into the prepared baking pan. Bake for 25-30 minutes until toothpick comes out clear from the center of the cake.
Cool for 10 minutes inside the pan then transfer to a cooling rack until completely cool.
2 Ingredient Chocolate Frosting
Ingredients:
3/4 cup Coconut Cream (chilled)
1-1/2 cup Chocolate Chips or Chocolate Chunks
Instructions
Add cream to a large bowl and set aside.
Melt the chocolate in a double boiler or the microwave. Add the chocolate to the coconut cream and whisk until thick and glossy.
Cover the bowl and place it in the refrigerator for at least 2 hours to thicken.
Remove from the refrigerator. Use a hand blender beat until the frosting gets light and fluffy.

Vegan Vanilla Frosting
Ingredients For The Base:
3 cups Powdered Sugar
1/2 cup Vegan Butter (softened)
1 tsp Vanilla Extract
1-2 Tablespoons Plant Based Milk
Instructions
Using a hand mixer beat all the above vanilla frosting ingredients together until creamy and smooth.
Cream Cheese Frosting
Add to the above vanilla base plus 8 oz. Vegan Cream Cheese (softened) beat until fluffy and smooth.
Note: You can double the cake recipe to make the two layered cake shown in the picture. Also double the frosting if needed.
