Who doesn't love Brownies? I KNOW I DO! But sometimes after eating one I feel a bit guilty. LOL Well no guilt no more! Our Fudgy Brownies are healthy, decadent and delicious! Gluten Free, Sugar Free and oh so good!!!
Ingredients
2 cups Almond Flour
1/4 cup Unsweetened Cacao Powder
1 Tablespoon Baking Powder
1/4 cup Monk Fruit Sweetener granules
Pinch of Salt
1/2 cup Brown Rice Syrup
3 Large Eggs (beaten) or Vegan Egg Substitute
1/2 cup Coconut Oil (room temperature)
2 tsp Vanilla Extract
1 cup Lily's Sugar Free Milk Chocolate Chips (or of choice)
Instructions
Preheat the oven to 350 degrees. Line a 8x8 square pan with parchment paper, place on a baking sheet and set aside.
In a large bowl mix together the almond flour, cacao powder, baking powder, monk fruit sweetener and salt until no clumps of powder are showing.
Add the beaten eggs, coconut oil, brown rice syrup and vanilla and mix until well combined, then fold in the chocolate chips. Pour the batter into the prepared baking pan and bake for 30-40 minutes until set completely in the center with no wobble batter when shaking the pan.
Remove from the oven and allow to cool completely or until the brownies get to a warm room temperature. Cut, serve and enjoy!
Options: You can drizzle the top of the brownies with melted chocolate chips and top with nuts for a fun look.
