Ingredients

1 cup Textured Vegetable Protein (rehydrated and squeezed dry)

1 can (15 oz) Kidney, drained and rinsed

1/4 cup Chickpea Flour

1/4 cup Bread Crumbs

1 Tablespoon Tomato Paste

1 Small Onion, finely chopped

2 Cloves Garlic, minced

2 Tablespoons Soy Sauce or Tamari

1 tsp Smoked Paprika

1 tsp Cumin

1/2 tsp Black Pepper

1/4 tsp Cayenne Pepper (optional)

1 tsp Dried Oregano or Thyme

2 Tablespoons Water or Vegetable Broth (only if needed)

2 Tablespoons Cooking Oil (for frying)

Instructions

In a large bowl, roughly mash the kidney beans with a fork leaving some chunks for texture.

Soak the textured vegetable protein chunks in hot water for 10-15 minutes until softened. Drain, squeeze out excess water, and chop or pulse briefly in a food processor for a mince-like texture but not too small.

Heat a skillet with a drizzle of oil over medium heat. Sauté the onion and garlic until softened and fragrant. Set aside to cool slightly.

Add the mashed kidney beans, textured vegetable protein chunks, sautéed onion and garlic, chickpea flour, bread crumbs, tomato paste, soy sauce, smoked paprika, cumin, black pepper, cayenne, and oregano into a large bowl.

Mix well until the ingredients form a cohesive dough-like mixture. If it's too dry, add a tablespoon of water or vegetable broth at a time until it binds well. If it's to wet add a bit more bread crumbs and chickpea flour. Adjust to the texture you prefer.

Divide the mixture into 4-6 portions and shape into burger patties, pressing firmly to ensure they hold together.

Heat a skillet with 2 tablespoons of oil over medium heat. Cook each patty for 3-5 minutes on each side, until golden brown and slightly crispy on the edges.

Serve burger on a toasted roll and toppings.
