Baked Shrimp w/Feta and Tomatoes


I love making simple and easy to make dishes that are packed with flavor. Well this dish is no exception! This Baked Shrimp with Feta goes well with a side of rice, linguini or your favorite side.


Ingredients:

1 lb. shrimp, peeled and deveined

1 pint cherry tomatoes, halved

1/2 cup crumbled feta cheese

2 garlic cloves, minced

2 tbsp. olive oil

2 tbsp. chopped parsley

Salt and pepper to taste


Directions:

Preheat oven to 400°F.


In a large bowl, mix together shrimp, cherry tomatoes, minced garlic, olive oil, chopped parsley, salt, and pepper.


Transfer the mixture to a baking dish and bake in the oven for 12-15 minutes or until the shrimp is cooked through.


Sprinkle crumbled feta cheese over the top of the shrimp and tomatoes.


Bake for an additional 5 minutes or until the cheese is melted and bubbly.

Serve hot.
