Baked Cod w/Roasted Vegetables


I love making sheet pan dishes as they are so easy, simple and the clean up is quick! This Baked Cod with Roasted Vegetables is savory and has such a delightful flavor.


Ingredients:

4 cod fillets

1 pint cherry tomatoes

2 bell peppers, sliced

2 zucchinis, sliced

2 tbsp. olive oil

Salt and pepper to taste


Directions:

Preheat oven to 400°F.


Place cherry tomatoes, sliced bell peppers, and sliced zucchinis on a baking sheet.

Drizzle with olive oil and season with salt and pepper to taste.


Roast vegetables in the oven for 15-20 minutes or until tender.


Season cod fillets with salt, pepper, and lemon juice.


Place cod fillets on top of the roasted vegetables and bake for an additional 10-12 minutes or until the cod is cooked through.

Serve hot.
