Bacon Jalapeno Cheddar Rolls


The smokiness from the crispy bacon, ooey gooeyness from the cheese with a kick of that jalapeno spice! A perfect appetizer for the holidays or anytime snack! We love making these for game day or during the holidays. A definite crowd pleaser indeed. I added a cheese sauce recipe that you can serve with this bread because who doesn't want more cheese. LOL!


Ingredients


1 pkg. Dry Fast Active Yeast


1 tsp Monk Fruit Sweetener


1/4 cup Warm Water


2 cups Almond Flour (plus extra to roll)


1/2 cup Coconut Flour


1 tablespoon Baking Powder


1/4 tsp Salt


1/2 tsp Onion Powder


2-1/2 cups shredded Mozzerella Cheese


6 ounces Cream Cheese


2 large Eggs


1-1/2 cup Sharp Cheddar Cheese


10 Slices Bacon (cooked and crumbled)


1 large Jalapeno Pepper (finely chopped)


1/2 tsp Jalapeno Extract (optional, but recommended for maximum flavor)


Instructions


Preheat oven to 375 degrees and lightly oil a large baking pan, set aside.


In a small cup mix together the yeast, warm water and monk fruit sweetener, set aside to proof and bubble up a bit.


In the meantime, add to a large bowl the almond flour, coconut flour, baking powder, salt and onion powder mix until well combined, set aside.


In a microwave proof bowl add the mozzarella cheese and cream cheese, heat in the microwave for about 60 seconds, stir, then place back in the microwave in 30 second increments until fully melted. Remove from the microwave, allow the cheese to sit for about 30 seconds then beat in the eggs until smooth. Add the flour mixture and yeast liquid to the cheese egg mixture and stir until fully combined and dough is formed.


Place a piece of parchment paper on the counter and dust with almond flour, place the dough on the paper and sprinkle more almond flour on top of the dough. Cover the dough with an additional piece of parchment paper and roll the dough into a 18x12 large rectangle. Remove the top parchment paper and evenly sprinkle on the cheddar cheese, then crispy bacon, lastly the chopped jalapeno peppers and press the filling slightly into the dough.


Roll the dough into a log, long ways. With a sharp knife cut the log into 12 pinwheels and place each, with the swirl side facing upward, into a large baking dish. Bake for 10-12 minutes until golden brown. Remove from the oven and serve.

Cheese Sauce Dip


1 cup Sharp Cheddar Cheese


4 ounces Cream Cheese


1-2 tablespoon Heavy Whipping Cream


1 tablespoon Hot Sauce


Instructions


Put all the ingredients in a microwave safe bowl and heat for 30 minute increments, stirring in between, until you get a smooth cheese sauce.


Note: these can be easily turned into a Vegetarian appetizer by omitting the bacon.
