Ingredients
1/4 cup Soy Sauce or Tamari
1/4 cup Rice Vinegar
2 Tablespoons Sesame Oil
1 Tablespoon Maple Syrup or Agave Nectar
2 Cloves Garlic, minced
1 Tablespoon Fresh Ginger, minced
1 tsp Sriracha or other Hot Sauce (optional)
1 Tablespoon Sesame Seeds (optional)
Instructions
Whisk all ingredients together in a bowl.
Pour over tofu and marinate for at least 30 minutes, preferably a few hours or overnight.

Asian Ginger Soy Tofu Stir-Fry
Ingredients
1 Block Tofu, pressed, cubed, and marinated in Asian ginger soy marinade
1 Tablespoon Vegetable Oil
1 Small Onion, sliced
1 Red Bell Pepper, sliced
1 cup Broccoli Florets
1/2 cup Snap Peas
2 Green Onions, sliced
Sesame Seeds, for garnish
Rice or Noodles, for serving
Instructions
In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the marinated tofu (reserve any leftover marinade) and cook until golden brown on all sides, about 5-7 minutes. Remove and set tofu aside.
In the same skillet, add onion, bell pepper, broccoli, and snap peas. Stir-fry for 5-6 minutes until the vegetables are tender-crisp.
Return tofu to the skillet, pour in any reserved marinade, and stir to coat everything well. Cook for another 2-3 minutes until heated through.
Garnish with sliced green onions and sesame seeds, and serve over rice or noodles.
