Ingredients
1 cup Almond Pulp (from homemade almond milk on this website)
2 cups Rolled Oats (I used Gluten Free)
1/2 cup chopped Nuts (such as almonds, walnuts, or pecans)
1/4 cup Seeds (such as pumpkin or sunflower seeds)
1/4 cup Dried Fruit (such as raisins or cranberries)
1/4 cup Maple Syrup
2 tablespoons Coconut Oil, melted
1/2 tsp Cinnamon
1/4 tsp Salt
Instructions
Preheat the oven to 325°F (165°C) and line a baking sheet with parchment paper.
In a large bowl, combine almond pulp, oats, chopped nuts, seeds, cinnamon and dried fruit.
In a separate bowl, whisk together maple syrup, melted coconut oil, and salt.
Pour the wet mixture over the dry ingredients and stir until everything is evenly coated.
Spread the granola mixture onto the prepared baking sheet in an even layer.
Bake for 25-30 minutes, stirring halfway through, until golden brown and crisp.
Allow the granola to cool completely before breaking it into clusters.
